
A Dahao fish ball from Shantou drew attention during a recent subgroup deliberation of the Shantou delegation at the Guangdong Provincial People's Congress on January 26. During an on-site demonstration, a delegate bounced the fish ball lightly on a plate, where it rebounded with a crisp sound, showcasing the product's notable elasticity.

The Dahao fish ball is a geographical indication protected product. Its production follows strict standards, from raw material selection to processing, and retains the traditional "thousands of strokes" technique, which involves repeatedly pounding selected sea fish to achieve its distinctive springy texture.

The demonstration served as a vivid example of Shantou's progress in developing a high-quality marine economy. Supported by modern marine ranching, the city ensures a stable supply of premium seafood, while offshore wind power provides clean energy. Improved logistics networks and the integration of marine industries with coastal tourism have further expanded market access for local specialties.

Shantou is advancing the transformation and upgrading of its traditional aquatic product processing industry with higher standards, technological innovation, and market expansion. Traditional products such as the Dahao fish ball are becoming recognizable symbols of the city's high-quality marine economy.
